This remarkable Bourbon is part of the Small Batch Bourbon Collection and is named for Basil Hayden, Jim Beam's master distiller when this recipe was developed in 1796. The abundance of rye here results in a smooth, mild bourbon with a slightly peppery taste and aroma. Experts recommend serving this neat.

Tasting note: Until recently, Green Spot was a closely guarded Irish treasure, exported only through the false-bottom carry-on bags of enterprising tourists . The whisky's flavour is sweetly malty, with hints of orange peel and honey, lifted by exotic spices, predominantly cardamom. It's delicate enough to match with food, but a classic way to serve it is as an apéritif. Part of the blend is aged in old sherry casks, and the flavour comes through in a whisper. . Very Special Old Arrack, Sri Lanka  750 mL
 
Arrack is distilled from the sap (called 'toddy') collected from the top of coconut trees at the point where coconuts would generally grow. The sap collected is extremely high in natural yeast (in fact, before cultivated yeasts were isolated, toddy was the source of yeast for raising breads and other baked goods), so it starts to ferment soon after it is collected. The product is then distilled and aged in Hamilla timber vats and then diluted and blended according to each producer's specifications. An almost identical product, called Feni, is made in Goa, India.

Tasting note: Medium deep amber colour with aromas of coconut, vanilla and cocoa bean. It is more intense and fuller in flavour than 'Old Arrack' (677732, below). Hare's Chase is near the village of Marananga in the Barossa Valley. The Marananga Valley is a sub-region distinguished by its red clay based soil. This wine is a blend of 25% Merlot, 63% Shiraz, 10% Cabernet Franc, 1% Cabernet Sauvignon and 1% Tempranillo. Enjoy it with roast leg of lamb or other flavourful meats.

Not all Australian Shirazes are fruit bombs. Compared to much of South Australia, Victoria is moderately cooler, thus creating wines that can show a fine balance between the fruit, acid and tannin. Plunkett's Blackwood Ridge' is a case in point. Our panel was quite excited by the complex fruit flavours that surrounded the tannic core. This is an Oz Shiraz that will reward mid-term cellaring (2-5 years).

Redbank's vineyards are situated in the foothills of the Pyrenees in Western Victoria. The area had previously been known for gold mining. The 'Fighting Flat' is a nearby clearing where miners had gathered on Sunday afternoons to 'let off some steam'. This cool climate Shiraz is an excellent value. Look for the one-two punch of spicy plum and raspberry fruit as well as clove and eucalyptus notes in this medium-bodied, ready-to-drink Shiraz from the makers of the sought-after 'Sally's Paddock'.

Tasting note: This much-loved old label disappeared for a while following the "merger" of Southcorp and Rosemount in 2001. Both Caymus' Conundrum and Ontario's Stratus 'White' borrow from a tradition established many centuries ago by the Alsatians: the blending together of many different grapes to create a unique, often very food friendly wine. Hugel resurrected this tradition with their 'Gentil' wine. It is usually a blend of Gewurztraminer, Pinot Gris, Riesling, Muscat and Sylvaner. This is a superb wine for spiced Chinese, Thai or Indian cuisine.
