Arrack is distilled from the sap (called 'toddy') collected from the top of coconut trees at the point where coconuts would generally grow. The sap collected is extremely high in natural yeast (in fact, before cultivated yeasts were isolated, toddy was the source of yeast for raising breads and other baked goods), so it starts to ferment soon after it is collected. The product is then distilled and aged in Hamilla timber vats and then diluted and blended according to each producer's specifications. An almost identical product, called Feni, is made in Goa, India.
Tasting note: Medium deep amber colour with aromas of coconut, vanilla and cocoa bean. It is more intense and fuller in flavour than 'Old Arrack' (677732, below).
