CHÂTEAU KSARA 'L'ARACK DE KSARA'
Lebanon
To make Arak, pure grape alcohol is redistilled with aniseed in a specially designed alembic still from France. Château Ksara's innovation was to find 'the heart' of the Arak by inserting a pipe and extracting the 'pure flower' of the product. According to ancestral custom, Ksarak is matured for two years in clay jars manufactured in Beit Chebab before release. Enjoy as you would French pastis or Greek ouzo.

MAURICE B. MECHELANY ARAK-AL JOUZOUR
Lebanon
Fans claim that arak ... is the sole drink to accompany meze [the Lebanese version of tapas], which relies heavily on lemon and tangy spices. Wine and whiskey tend to clash with the myriad flavors, while arak washes the taste buds, refreshing the palate for each new dish: bitter olives, dewy goat's cheese, radishes, tabbouleh, raw minced lamb, zucchini with cinnamon, potatoes in coriander, mashed eggplant with garlic or chicken livers in pomegranate juice, to name just a few. ANGOVE'S 'LONG ROW' CHARDONNAY 2004
Estate Bottled, South Australia
The grapes for this full-bodied and fruity Chardonnay are sourced from three distinct regions, each adding texture and complexity to the flavour profile. Seventy-five percent of the grapes come from the Nanya vineyard in the Riverland region of South Australia, famous for its 'long rows' while the other 25% are sourced from the cooler Eden Valley and Padthaway regions. The producer recommends pairing it with antipasto, lamb chops or a seasoned roast chicken.
