To create this 'ice cider' the apples are picked at their peak maturity and then kept in a temperature controlled room until January when they are exposed to the sub-zero temperatures (minimum -15 degrees) to freeze them. They are then pressed to extract a highly concentrated juice which ferments slowly. This would pair well with apple based desserts or with fine chocolates with your valentine.

This blend of Grenache 40%, Syrah 40%, Carignan 15% and Mourvédre 5% is vinified in a 'rotary cask'. Domaine Sorin has pioneered the technique of placing their 7600 litre barrels for certain wines on a device that slowly rotates the wines as they ferment. The process also automatically crushes the grapes. Sorin believes the process gives them rounder, fuller flavoured wines with well-integrated tannins. The wines are then blended and matured for nine months in French barriques, 20% of which are new.
