Mandarin oranges were first introduced into Europe in 1800. Soon after, the habit of macerating them in Cognac became all the rage. In fact, it is said to have been Napoleon Bonaparte's favourite drink. He invited his friend, Antoine-Francois de Fourcroy, over to enjoy this delicious libation with him. The Fourcroy family kept the recipe in the family for many years, finally creating a commercial version in 1892. This version is now made in Belgium where it is macerated in high quality brandy. Enjoy it on its own as an after dinner sipper, dribbled over chocolate ice cream or in cocktails.

Les Vergers Lafrance orchards are located in St-Joseph-du-Lac and boast over 12 000 apple trees. To create this 'ice cider' the apples are picked at their peak maturity and then kept in a temperature controlled room until January when they are exposed to the sub-zero temperatures (minimum -15 degrees) to freeze them. They are then pressed to extract a highly concentrated juice which ferments slowly. This would pair well with apple based desserts or with fine chocolates with your valentine.

Henry of Pelham has shown a deft hand at the production of Pinot Noir. Viticultural Manager Matthew Speck has had great success delivering the notoriously difficult grape to skilled winemaker Ron Giesbrecht. Giesbrecht then works his magic with this grape in a style that is definitely closer to the Burgundian model than the New World style. There is an excellent balance between fruit, tannin and acid here. Enjoy with grilled tuna, pork liver pâtés or roasted duck.

  TYRELL'S 'LOST BLOCK' SEMILLON  2004

In 1993, Tyrell's mistakenly left an entire parcel of Semillon on the vine allowing it to ripen more than usual. When this happy accident was finally discovered, the soft, fruit-forward wine that resulted immediately found favour in the market and the "Lost Block" was born.

Tasting Note: One of the most successful offerings in d'Arenberg's portfolio is the impressive 2004 The Laughing Magpie Shiraz/Viognier (94% of the former and 6% of the latter). Not surprisingly, this is a flamboyant, exuberant, deep ruby/purple-colored effort exhibiting plenty of sweet blackberry and cassis intermixed with touches of marmalade and honeysuckle.   TWO HANDS 'BELLA'S GARDEN' SHIRAZ  2004

Winery founders Michael Twelftree and Richard Mintz are the 'two hands' behind the name. The winery's focus is premium small lot Shiraz that express the subtle differences of terroir in the Barossa. Although no reviews for the 2004 Bella's Garden were available at press time, each of the previous two vintages scored 95 points with Robert Parker Jr. and the last three vintages have scored 93 or above with Wine Spectator.

This finely crafted Shiraz is from Two Hands 'Picture Series'. The 'gnarly dudes' in question are the rather fierce and twisted looking old vines from which the wine's fruit is sourced. Winemaker Matt Wenk has a well-deserved reputation for creating a tightly focused Shiraz that emphasize the fruit while perfectly integrating the oak and tannins. This dude is ready to be enjoyed anytime over the next five years.

Tasting Note: Over recent years, La Vieille Cure has become one of the leading estates of Fronsac. Its style is one of opulence, complexity, and sexy, up-front fruit, but with enough tannin and structure to age for a decade. The 2001 is a worthy successor to their brilliant 2000. A deep ruby/purple color is followed by aromas of incense, kirsch liqueur, black currants, and spice box. Low acidity, ripe tannin, and a plump, fleshy texture all add to the allure of this beautifully made, pure wine. A style of wine that is generically called Vin doux Naturel, the sweetness is retained in this wine by the addition of a neutral grape spirit to the wine. Fermentation is arrested and the alcohol content is heightened. This is a process identical to Port production. The aromatic Muscat Blanc à Petits Grains is one of the best wines to use for this due to its intense aromas. Enjoy it chilled with blue-veined cheeses. The producer suggests that this wine will keep in the refrigerator for several days after opening.

This blend of Grenache 40%, Syrah 40%, Carignan 15% and Mourvédre 5% is vinified in a 'rotary cask'. Domaine Sorin has pioneered the technique of placing their 7600 litre barrels for certain wines on a device that slowly rotates the wines as they ferment. The process also automatically crushes the grapes. Sorin believes the process gives them rounder, fuller flavoured wines with well-integrated tannins. The wines are then blended and matured for nine months in French barriques, 20% of which are new.
