This new AC, Minervois la Livinière, separated from the larger Minervois AC in 1997. The rationale was that the 'terroir' was a step above the bigger region. Grapes better suited to the area like Syrah, Mourvèdre and Grenache now dominate the vineyards. Every wine and every vintage must go through a rigorous tasting process before being allowed to use Minervois la Livinière on their labels. Producers, such as Château Cesseras, have thrived under the new AC, creating explosive, balanced delicious wines that are excellent for rich beef dishes or for maturing, short to mid-term, in a cellar (2-5 years).

Medium-bodied and pure, with a sweet attack, it narrows out in the mid-palate and finish, and possesses some noticeable tannin. Two to three years of cellaring is recommended. ... "Clairet" is, in fact, a rosé wine made like a red. Ten percent of the juice in vats of red wine is bled off after 24-48 hours of maceration. Piedmont

Of all the Piedmontese DOCs, Langhe is the most liberal in terms of grape variety and allowable winemaking techniques. It is the place where superstars such as Angelo Gaja go to push the boundaries. With this wine, Gaja combines 35% Nebbiolo with 35% Merlot and 30% Cabernet Sauvignon. The wines are then matured for 18 months in French barriques and a further 6 months in bottle prior to release. Expect an elegant, balanced, ageworthy wine that can be enjoyed now with mature cheeses or rare cuts of meat.
