ALVEAR
PEDRO XIMÉNEZ 2003
DO Montilla-Moriles
Set up in 1729, Alvear is one of Spain's most prestigious and
internationally acclaimed Bodegas. Alvear, located in Montilla-Moriles
near Jerez, is famous for its intensely sweet liqueur wines, which
are made by spreading out the grapes on esparto grass mats to toast
in the autumn sun until they are practically raisins. Later, when
they are crushed, the grapes will produce a dense, raisin juice
must, that is vinified and aged to produce the luscious Pedro Ximénez
wines. One of Spain's best-kept secrets, these wines are brilliant
alternatives to Sherry.

DOMAINE
DU CRAMPILH VIEILLES VIGNES 2001
AC Madiran
This wine is made with 100% Tannat. Generally, much of the tannin
in these wines comes from the maceration with the grape's skins.
This version is made with fruit from old vines (average age 70)
which produces reduced yields and smaller berries that further
increase the tannins. Give this wine 4-10 in a cellar and you will
be amply rewarded.

MARQUÉS
DE VITORIA GRAN RESERVA 1996

Unlike the majority of Rioja wines which are blends of Tempranillo
and other grapes, this wine is made in a decidedly modern fashion

plus 6 years in bottle before release. The result is aromas of
red currants, clove and black pepper. The palate shows a medium

recommends pairing it with stewed fish, game casseroles and suckling
pig.
