Set up in 1729, Alvear is one of Spain's most prestigious and internationally acclaimed Bodegas. Alvear, located in Montilla-Moriles near Jerez, is famous for its intensely sweet liqueur wines, which are made by spreading out the grapes on esparto grass mats to toast in the autumn sun until they are practically raisins. Later, when they are crushed, the grapes will produce a dense, raisin juice must, that is vinified and aged to produce the luscious Pedro Ximénez wines. One of Spain's best-kept secrets, these wines are brilliant alternatives to Sherry.

'Toasted Head' simply refers to the process of toasting the heads and staves of the oak barrels which imparts the mellow oak character to this wine. Comprised of 81% Cabernet Sauvignon and 19% Merlot, this wine was aged for 18 months in 100% French 'toasted' oak barrels. Look for aromas of cherry, leather and clove that give way to blackcurrant flavours with hints of spice and cedar on the palate.

Tasting Note: Named for an Australian artist whose desert-scape adorns the label, Allyson Parsons is a less expensive and better value range from Craneford. This is more slender than the muscular John Zilm wines. Still very ripe prune-black cherry fruit on the nose, plus cedar and herbal notes. Medium-full bodied yet quite dense with a slight hot finish and moderate tannin. McPherson winery is located in the Goulburn Valley, one of Australia's oldest and most prestigious wine growing regions. This Reserve Shiraz is aged for 18 months in French and American oak barrels so bank on spicy vanilla oak on the palate as well as ripe berry fruit. Pairs beautifully with herb-crusted rack of lamb.

Riesling shows its true nobility in this clean, fresh complex wine. Its classic off-dry style marks it out as the perfect match for spicy, oriental food. Founded in 1997, Ella Valley Vineyards is located on the Kibbutz Netive Halamed Hey in the Jerusalem Mountains. The first wines, made by French trained Doron Rav Hon, appeared in 2002. This medium-sized winery has exciting plans. Currently, they produce about 15,000+ cases. By 2010, they plan to produce between 42,000 and 67,000 cases. Their 'Ever Red' wine is a blend of 70% Cabernet Sauvignon and 30% Merlot.

'Camus' is dedicated to the great French/Algerian philosopher/writer Albert Camus.

Tasting Note: Deep ruby/purple colour with aromas of blueberry, plum jam and oak spice. It is dry, generous, round and full-bodied. The result is aromas of red currants, clove and black pepper. The palate shows a medium body, smooth tannins and lingering spice-filled finish.
