Rum
XM ROYAL EXTRA MATURE DEMERARA RUM 10 YEARS OLD
Guyana
(Banks)

Though Demerara is a Guyanese word for raw cane sugar, it is also commonly used to refer to any dark rum from Guyana. The d’Aguiar family have been distilling spirits in Guyana for over 150 years and today, the enterprise is one of the most successful to ever emerge from Guyana. This delightful, smooth- as-glass Rum won a Gold Medal in the Premium Category at the 2003 International Rum Festival.

Premium saké, such as this one, is best served slightly chilled, and pairs well with not only sushi but a variety of fish and pork. Try it with salmon poached with fresh herbs or grilled pork tenderloin. When cooking with saké use a good one, because an ordinary version will give you an ordinary recipe.

MONMOUSSEAU CUVÉE J.M. BRUT  2003

(AC Touraine)

Cuvée J.M. is named for one of Monmousseau’s founders, Justin Marcel. Created with 100% Chenin Blanc, it is made in the traditional method. It abounds with subtle bubbles and displays typical Chenin aromas of peach and citrus, plus a very pleasing breadiness from the secondary fermentation. This fizz is an excellent aperitif that will set the stage for many a fine meal.

ACKERMAN CABERNET FRANC ROSÉ BRUT

Fresh and fruity, this 100% Cabernet Franc fizz is loaded with wild strawberry and blueberry aromas and flavours. It is slightly off-dry with a very good mousse, body and weight. It is a good sparkler for pork dishes.

NINO FRANCO PROSECCO di VALDOBBIADENE BRUT

TASTING NOTE: This transparent, pale straw-color wine shows glints of gold against the light. It pours up with a foamy froth that drops back quickly, leaving a very persistent bubble stream. Attractive scents mingle citrus and a hint of apple. It’s clean and in flavor, snappy lemonlime with a creamy, carbonated mouthfeel and very long finish. Very slight residual sweetness is concealed by the carbonation, leaving a flavor impression that’s bone-dry. (Robin Garr, www.wineloverspage.com, March 13, 2007)

THE ICE HOUSE NORTHERN ICE VIDAL ICEWINE  2005
VQA Niagara Peninsula

Ontario’s Ice House 2005 Vidal Icewine has out-performed thousands of wines in Monde Sélection in Brussels, garnering a rare and coveted Grand Gold. “We are thrilled,” winemaker Jamie Macfarlane told me. Ice House Winery in Niagara, founded in 2005 as an icewine specialist, has no retail licence yet and is not open to the public. (Gordon Stimmell, Toronto Star, April 18, 2007) The winery suggests serving this Icewine with pastries and desserts made with lychee nuts, apricots, raisins and mangoes. Or wait until the height of fresh Ontario peach season, peel them, slice them, drizzle a little icewine over them and enjoy.

This blend of Cabernet Sauvignon, Merlot and Cabernet Franc won a Gold medal at the 2006 Cuvée Awards. Creekside really capitalized on the warm growing season of 2002 producing one outstanding red after another. This Bordeaux-style blend has lovely aromas of mocha, cherry, spice and tobacco. Soft and supple, this medium-bodied beauty is ready-to-drink now with grilled steak or rack of lamb.

VQA St. David’s Bench

This wine won a Gold Medal at the 2007 Ontario Wine Awards for Best Shiraz/Syrah.

TASTING NOTE: Medium-deep ruby/purple colour leads to a fine, youthful nose of blackpepper, blackberry, plum, blueberry and spice. Dry, fairly fleshy with good layered fruit surrounded by a core of tannin and crisp acidity. The oak is present, but well-integrated. This is a wine to cellar for 2-5 years, or enjoy it tonight with beef and roasted root vegetables.  (VINTAGES panel, May 2007)

VQA Niagara Peninsula

Henry of Pelham continues to display a deft hand with that notoriously fickle, Pinot Noir. Year after year, Viticultural Manager Matt Speck delivers ideally ripened fruit into the skilled hands of winemaker Ron Giesbrecht. Giesbrecht then works his magic creating a style of wine that is closer to Burgundy than the New World. There is an excellent balance here between ripe fruit, silky tannins and crisp acidity. Enjoy with grilled tuna, pork liver pâtés or roasted duck.

LAKEVIEW BACO NOIR RESERVE  2004
VQA Ontario

TASTING NOTE: Lakeview’s Baco Noir Reserve has emerged as one of Niagara’s biggest, blackest reds. A tough nut in many ways, and hardly a thing of grace, but it is very complex. It’s intense and aggressive with very ripe prune fruit, smoky oak, almost briny rapini/spinach, cigar and saddle leather. Full-bodied to say the
least, dense and tart, almost salty on the finish, with considerable tannin. High acid. Needs bottle age. Best 2010 to 2020. Bronze Medal at the 2006 Canadian
Wine Awards [and at the 2007 Ontario Wine Awards]. (David Lawrason, www.winerytohome.com, Oct. 2006).

TASTING NOTE: Light gold. Smoke, apple and peach on the nose, with a light hint of sweet butter. Supple and juicy, with crisp citrus and apple flavours lifted by youthful acidity and honed by nervy mineral tones. I suspect that a few more months will add body and sweetness, based on how delicious the 2005 version is right now. Score - 89 (+?).  (Josh Raynolds, International Wine Cellar, July/Aug. 2006)

The LUCKY COUNTRY CABERNET SAUVIGNON  2004
Langhorne Creek, South Australia

This wine is part of an exciting new venture of the ultra premium winery Two Hands. The Lucky Country line is essentially a second label bottling from their prestigious Garden and Picture Series wines, and offers excellent value. It has an opaque-to-dark purple colour, with aromas of blackberries, chocolate and a hint of spice. The palate shows red and black fruits, plums and black pepper with soft tannins. A great match with gourmet burgers or barbecued sausages.

SERESIN SAUVIGNON BLANC  2006

TASTING NOTE: Pale in colour and a little herbaceous and oily on the nose with a subtle presence of that distinctive Marlborough ‘sweat’. After 30 minutes chilling, tropical fruit aromas emerged too. TASTING NOTE: This primarily Merlot-based wine represents an excellent effort from this property. This deep plum/ruby/purple-tinged hussy boasts plenty of jammy black cherry fruit interwoven with notions of smoke, vanilla, and white chocolate. It is a sexy, up-front, fleshy effort with low acidity as well as abundant fruit, glycerin, and texture. Consume it over the next 7-8 years.

CHÂTEAU D’ARCHE  2003
AC Haut-Médoc, Cru Bourgeois Supérieur

The wine is a blend of Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Carmenère. Carmenère, a grape that has recently found great success in Chile and is rarely found in Bordeaux anymore. We have two in this release (the other is Château de Gaillat, 035824, $ 20.95). This attractive wine has aromas of dried roses and wild berries. It is dry with pretty fruit surrounded by fine tannins. Enjoy it with roast beef and root vegetables.

CHÂTEAU DE GAILLAT  2001
AC Graves

In the mid-seventies Pierre Coste replanted Château de Gaillat exclusively to red grapes. Enamoured of one grape that is rarely grown today in Bordeaux, Coste ensured it was in his vineyards; Carmenère is still used in the blend today, along with Cabernet Sauvignon, Malbec and Merlot. This wine is smoky and fruity with layers of cedar complexity perhaps brought to the blend by the Carmenère. Enjoy it with grilled steak.

Château Labadie is a multi-award winning winery located in the Médoc on a 43 hectares property. This wine is traditionally a blend of 51% Merlot, 43% Cabernet Sauvignon, 3% Cabernet Franc and 3% Petit Verdot. After a long, slow fermentation in stainless steel the wine is matured, depending on vintage, 10-14 months in new French oak barrels. This amount of oak treatment is usually reserved for high-end wines. The sophisticated, cassis cherry-and chocolate-scented and -flavoured wine is beautifully balanced by ripe tannins. REMOISSENET père & Fils GIVRY  1999
AC, Le Préféré du Roi Henri IV

Yes, it is said that the wines from Givry were Le Préféré du Roi Henri IV (preferred by Henry IV, King of France, 1589-1610), so you too can feel like royalty while enjoying this wine. After a period of neglect, a dynamic new manager, Bernard Repolt, and new winemaker Claudie Jobard, have revitalized this famous house. As this Pinot Noir from Givry demonstrates, Remoissenet is renowned for its wonderful mature stocks. This 1999 vintage topped off an amazing run of successful years with gusto. It is still fruit-forward and youthful. Age it 2-4 years more or match it tonight with grilled lamb.

LE GRAND NOIR (BLACK SHEEP) CABERNET/SHIRAZ  2004
Vin de Pays d’Oc
(Celliers Jean d’Alibert)

Over the last 15 years, Midi has become a free-wheeling place where many styles of wines are made. Outside the ACs, winemakers are allowed to be creative with grape varieties and even label choice. The whimsical single black sheep on the label is a real eye-catcher. Or the wine is a real palate pleaser. An unusual blend for France, this Cabernet/Shiraz (and an unusual spelling for Syrah in France too) is fruity, flavourful and balanced. This would make a terrific barbecue wine. Look for its white partner, Chardonnay/Viognier (030304, $ 14.95).

CHÂTEAU BOUISSEL CLASSIC  2004
AC Fronton
(Pierre Selle, Vign.)

The AC Côtes du Frontonnais recently shortened its name to AC Fronton. Located north of Toulouse, it is considered one of the most dynamic regions in Southwest France. It is distinguished by the use of Negrette as its principal red grape. Negrette is a grape that Jancis Robinson describes as “more supple, perfumed, and flirtatious than that produced from the more famous south western black variety Tannat.” (Oxford Companion to Wine, 3rd Edition, 2006). Château Bouissel adds a bit of Cabernet Franc, Syrah and Malbec here, creating a uniquely fruity, gamey, intense wine that is great for flavourful beef dishes.

MICHELE CHIARLO GAVI  2005

TASTING NOTE: I haven’t seen a Gavi like this in years – or one that registers in at only 11.5% alcohol! Light straw in color, with a greenish tone. The nose is green too – green apple, lime, mixed with some incipient minerality. Really light, dry and crisp on the palate, with a lovely, lemony, evanescent finish. This is most definitely a food-loving white – it was brilliant with the basilscented lobster – but, without any penalty for the taster, it carries just a bit more body and importance than some food-loving whites do.
