AC Alsace, Méthode Traditionnelle
Relatively rare for sparkling rosé from France, this Crémant
d'Alsace is made only with red-skinned Pinot Noir. Most are a blend
of red and white wines. The grapes skins are given a short maceration
on the juice to impart the pretty colour and also give the wine substance.
Secondary bottle fermentation and maturation takes 18 months, adding
layer upon layer of flavour and, oh yes, bubbles. They add a slightly
off-dry dosage to create a perception of sweetness to the finished fizz.
This is an excellent partner for a variety of seafoods including lobster,
grilled prawns, grilled salmon and calamari.

AC Seyssel
A flavourful food-friendly fizz. Rarely do wines from this tiny Savoie
appellation, of which the Seyssel AC is a sub-region, make it to the

Roussette and Molette, indigenous grapes that are used quite successfully

This is one of two exciting Verdelhos from the Hunter Valley in

is native to Portugal and was originally planted in Australia when
the local wine industry was dominated by sweet fortified wines. Today,
winemakers in the Hunter Valley use this variety to craft fascinating

TASTING NOTE: ... [Pirramimma is a] leader in [making] Petit
Verdot in this country. This particular wine has a deep purple crimson
colour. It is aromatic with loads of blackcurrants filling the senses.
This is followed by cedary oak and cigar box nuances, smoked bacon,
violets and an earthiness. Still a young wine, albeit well structured,
balanced and drinkable, it should develop beautifully and gracefully
with age. Try this with a grilled New York cut steak and diane sauce.

New to our market, Lawson's Dry Hills is a family-owned winery
established in 1992. As with many Kiwi wineries, the Lawsons began
their vinous life in 1980 as grape growers before turning to winemaking
12 years later. Their first wine was a Gewurztraminer. They now produce
a full range of wines, including this black cherry- and spice-scented

Château Haut-Guiraud's Péché du Roy (Fish of
the King) is so named because King Louis XIV (1642-1715) loved to
fish at this estate. The 2004 vintage is a blend of 80% Merlot and
20% Cabernet Sauvignon. This wine, fit for a king, is ripe and round
with a good structure brought to the fore by the 14 months spent
ageing in new French barriques.

This blend of 60% Cabernet Sauvignon, 30% Merlot and 10% Cabernet
Franc is aged in 50/50 new French oak and stainless steel. It is
bottled unfined and unfiltered, thus preserving as much of the forward
fruitiness as possible. Philippe Magrez, the son of Château
Pape-Clément-owner Bernard Magrez, has owned the estate since
the spring of 2005. His aim is to create wines that not only meet
the high standards of the AC, but exceed them. This 2004 Plaisance
does just that. Age it 3-5+ years or enjoy it tonight with grilled
steaks.

Moulin à Vent is arguably Beaujolais's finest sub-region.
The wines are renowned for maturing beautifully for five years or
more in a cellar. They are sometimes mistaken for Burgundian Pinot
Noirs in blind tastings. This version, grown in a distinct area with
granite and sand soil called Les Caves, is aged for 10 months in
oak before bottling. The wine is rich and flavourful with a firm
streak of tannin suggesting good ageing potential (2-4 years). Enjoy
it tonight, if you must, with rare lamb or veal dishes.

single vineyard Clos de Bully, are now designed for enjoyment over
the next 10 years rather than 10 to 20 years down the road.

Savigny-Lès-Beaune distinguishes itself by the spicy character
of its 'goût de terroir'. The village itself sits tucked away
in a little valley between Pernand and Beaune, and the vineyards
for the appellation are planted on two hills with different exposures.
To the north is the Vergelesses slope, producing delicate and perfumed
wines, while to the south is the beginning of the Beaune 'Côte'.
The wines from the latter tend to have that much more structure.
Drouhin's Savigny-lès-Beaune is fermented in both open wooden
and stainless steel fermenters. This cherry- and plum-scented wine
is elegant and flavourful with ripe tannins giving balance. Cellar
it for 3+ years or enjoy it tonight with rare veal chops.

TASTING NOTE: The 2003 Châteauneuf-du-Pape Clos du Calvaire
is outstanding, simply richer, fuller, and sexier than its younger
sibling. Its deep plum/garnet color offers up heady and seductive
notes of cherry and currant jam intermixed with smoke, herbs, roasted
meats, and loads of fruit. The fruit dominance continues in the mouth
although this cuvee has more significant glycerin as well as heady,
high alcohol. This is a luscious, hedonistic Châteauneuf-du-Pape
to drink over the next 7-10 years.

La Forêt is a blend of the indigenous Négrette (45%),

including raspberry, blackberry, cassis, dark chocolate, licorice

Ruit Hora translates as roughly "time is running away". Presumably,
the producer is saying "don't waste time" on bad wines. This masterful

months in new French barriques. To soften the acids, it is allowed
to go through full malolactic fermentation. The resulting wine displays
aromas of cassis, cherry, vanilla, coffee and dark chocolate. A hint
of tannin adds structure and elegance to the wine. Cellar it 3+ years

Classico versions, they have the ability to age longer. This version
is an ideal candidate for mid-term ageing 3-5 years.
