Caol Ila is pronounced "cullEEla" and means Sound of Islay. The distillery is in a cove near Port Askaig that overlooks the Sound of Islay. This is a rare treat because, for such a cherished distillery, remarkably little of it is released as Single Malts, such as this. Most of the distillates are sold to other producers for their blends. Lochnagar distillery was allowed to attach 'Royal' to the front of their name in 1848 after Queen Victoria declared it to be her favourite Scotch. Today, the tiny distillery is used as an educational facility for both Diageo employees (Diageo owns the property) and customers. Considered the connoisseur's Pastis, Henri Bardouin is a great product. If you want to enjoy it as the French do, present each of your guests with a shot of Pastis in a heavy-bottomed glass. Then pass around a ceramic jug filled with chilled water. As water is added to the Pastis it turns a lovely milky colour. When served in the proper proportions of water to spirit (approx. 4 to 1), the resulting beverage has about 6% alc./vol.

This wine is a bit of a rarity as it is barrel aged in new Canadian oak for two weeks - an uncommon practice for the Riesling grape.

Tasting note:  The oak lends a touch of spice to the nose in addition to the fresh citrus fruit aromas, particularly lime. There's also just a hint of petrol, typical to Riesling. Nk'Mip Cellars is located in the South Okanagan. Pronounced in-KA-meep, it is the first winery in North America to be owned and operated by aboriginal people. Nk'Mip is the band's name in the local Okanagan language. The band has been growing grapes on their land since 1968, but until 2002 they sold them to other producers. A joint venture with Vincor International in 2002 helped Nk'Mip Cellars establish the winery. From the get go, the wines have garnered several awards at national and international competitions, plus strong critical acclaim.

Viognier has come back from the brink of extinction in the 1960s to become an increasingly popular grape variety worldwide. Prior to 1990, California had virtually no Viognier vines, but today there are about 800 hectares of it basking in the sun of the Golden State. Montpellier has had great success with this tricky variety, producing well-balanced, crisp and pleasing wines year after year. For those not familiar with this lush and aromatic grape, this is a perfect introduction!

This complex and complete Pinot Noir comes from the 'La Bauge-au-Dessous' vineyard. Winemaker/owner Jim Clendenen is zealous about the need for cooler climates for the proper maturation of Pinot Noir. At 'La Bauge' he found it. Clendenen's sole concern is to achieve the perfect balance between acid and fruit. Vintage after vintage, including this 2001, he has succeeded.

D'Arenberg is another Aussie winery that has pursued grape varieties from the Rhône Valley beyond Shiraz (Syrah). In fact they refer to their Viognier and this Roussanne as "The Great White Hopes". A real rarity, 'The Money Spider' (for an explanation of the name, see the back label) was the first single bottling of Roussanne in the McLaren Vale. It consistently delivers a delicate and supple wine with lively fruit flavours, such as peach, nectarine and pears with a hint of spice. Look for more Aussie producers to follow d'Arenberg's lead.
