Méthode Classique, another name for the technique perfected in Champagne, is the most meticulous process for producing sparkling wine. With this blend of 70% Pinot Noir and 30% Chardonnay, two varieties that Ontario does particularly well, winemaker Marco Piccoli has created a masterful example of the style. This 2006 is the premiere vintage of the Entourage and Piccoli's second sparkling vintage for Jackson Triggs—two exciting factors that speak volumes for JT's sparkling future. Try this with oysters on Valentine's Day, and excite some effervescence of your own.

TASTING NOTE: Bottle fermented and aged 3 years on the lees before disgorging, Jackson Triggs' Silver Series Brut has a marked yeastysmoky, bicuity character on the nose, with wet stone and roasted citrus fruit. The palate is medium bodied, dry, with riveting, refreshing acidity, fine CO2 integration and really quite excellent length. Very nice quality bubbly and elegant packaging, too.
