At one of the most promising new wineries in Niagara, virtuoso winemaker Adam Kern makes this unconventional white wine by blending Riesling – part of it fermented in acacia, which adds a unique honeyed floral note – with barrel-fermented Chardonnay, skin-fermented Gewürz and just a splash of Sauvignon Blanc. Savour this sip? Don’t mind if I do!

TASTING NOTE: Part of the Riesling in this blend – which also contains barrel-fermented Chardonnay, skin-fermented Gewürz and a splash of Sauvignon Blanc – was fermented in acacia, which adds lovely exotic floral, vanilla and forest notes to a juicy core of apple, peach and citrus. A subtle mineral quality underpins it all nicely. Lightly chill and sip with Alsatian onion tarts. (Vintages panel, Sept. 2018)
