Beauvignac Picpoul de Pinet is perfect to refresh and stimulate the palate, perhaps with a Niçoise salad. Add a splash of colour with Perrin & Fils Tavel Rosé, especially if chicken or salmon is on the menu. Château de Jau is the pièce de résistance with duck, sausages or cheeses.

What authentic Aussie grill-fest would be complete without sizzling sausages and onions served sandwich-style – alongside X & Y Cabernet/Merlot.

HOPE CHARDONNAY  2007
Hunter Valley, New South Wales, Estate Grown

This crowd-pleasing Australian Chard is robust but not overblown. It's matured in 100% new oak, giving it a hefty portion of toasty, buttery character while it retains ample finesse. Look for green apple and tropical fruit flavours to complement the oaky notes. This wonder from down under will stand up to a feast of flame-grilled herbed chicken, or sea scallops fried in butter and garlic.
