Upon walking into the boutique at
De Sousa Wine Cellars one is immediately
aware of a strong European
influence. John De Sousa learned
winemaking from his father, who
learned it from his father back in
Portugal. In 2001 Andrzej Lipinski,
who shares the De Sousa’s traditional
winemaking philosophy, joined
the team. At De Sousa cellars, wine
is first and foremost an agricultural
product; the art of winemaking is harnessing
the quality in the grapes and
channelling it into the finished wine.

Gewürztraminer is a grape variety well-suited to Ontario's cooler climate. De Sousa's 2006 is a crisp, refreshing wine with gentle aromas of tropical fruit and wild flowers. The cleansing vein of acidity makes this an ideal food wine, and it would be a great match for a Thai coconut-milk curry, seafood or a roasted pork loin stuffed with mushrooms.
