Kittling Ridge Symmetry Old Vines Foch 2005 VQA Niagara Escarpment
Maréchal Foch is a hybrid variety that is well-suited to the Ontario climate as it is winter hardy and requires a short growing season. Producers have discovered that using old vines Foch results in more richly flavoured wines. In 2005, Ontario experienced a long autumn, so Kittling Ridge left their Foch on the vine an extra 14 days to concentrate the grape sugars. The result is an intense wine with flavours of cherry and violets, ripe tannins and balanced acidity.
