Philip Bradshaw, is emblematic of

Ontario is attracting. After attaining
a doctorate in Wine Chemistry from
Charles Sturt University in Australia,
Bradshaw honed his skills in France,
South Africa, Germany and his
homeland Australia, before coming
to Niagara in 2004. He has now
worked in Canada longer than any
other country – a good indication of
the excitement Ontario wines are
creating.
“An Aussie professor of mine was trying his hardest to rope me into
the wine industry. After I did my first crush I was absolutely
sold. For me, the beauty of making wine in Ontario is that, even though
I will always be an Aussie boy, I really feel home here.”
Pillitteri is the world's largest producer of Icewine and is a magnet for international talent. Making wine from frozen grapes offers a unique set of challenges, but because Pillitteri brings a wealth of experience and expertise to the production of Icewine, few are as committed as it is. Their 2004 effort has intense flavours of apricot and grapefruit with light spice. The thick, rich mouth-feel is offset by the refreshing vein of acidity. Try it instead of dessert, or with a selection of cheeses after a fine meal.
